Anyone have recommendations on fantasy books with a decidingly non-European based background? Not biased against them, but I want to try something different. Thanks!

They're hard to find, but Charles Saunders wrote a trilogy about Imaro that's based in Africa. Some of the stories in the Sword & Sorceress series have been based in Africa (and African myth) as well. The Arabesques anthologies have the usual Arabian Nights thing going on (although that's definitely as viewed through European eyes). Jessica Amanda Salmonson has written some Asian-set books. I really enjoyed "The Harem of Aman Akbar" by Elizabeth Ann Scarborough.

A writer named Kurt R. A. Gambastiani has just published a fantasy described as "A modern fantasy of the Middle East," titled Dreams of the Desert Wind. It's published by Fairwood Press -- www.fairwoodpress.com/ -- click Catalog, then Novels.

There is plenty of Asian fantasy but only a tiny amount is in English.

The Japanese GUIN SAGA is being translated now and the first few volumes are in English. Supposedly this is the longest fantasy series in any language; I haven't read any so I can't say how good it is.

Chinese swordplay fantasies are plentiful, the average novel spanning several volumes, but again very little is in English. Several books by Louis Cha (Book and the Sword, The Deer and the Cauldron) are available in English though.
